Maple-Roasted Strawberries Empty Maple-Roasted Strawberries

Serves 8; Active time: 10 minutes; Total time: 55 minutes; Nutrition: 46 calories, 2 g fat (0.5 g saturated), 50 mg sodium, 8 g carbs, 1 g fiber

Ingredients:
  • 2 tablespoons maple syrup
  • 1 tablespoon olive oil
  • 2 teaspoons balsamic vinegar
  • Kosher salt
  • 1 pound strawberries, hulled and halved (quartered if large)

Directions:
  1. Heat oven to 350°F and line large rimmed baking sheet with parchment paper.
  2. In large bowl, whisk maple syrup, olive oil, vinegar and 1/4 teaspoon salt. Fold in strawberries.
  3. Transfer to prepared baking sheet, arrange in single layer, and roast just until juices are thickened, 40-45 minutes.
